Along the length of the country, in addition to the products in the forests under the sea, across the delta, coastal areas… there is also the indispensable intoxicating substance associated with the land's name, which is a factor that keeps many far away visitors coming once and then remembering, then unable to forget and coming back again.

In the famous Vietnamese wine village, there are three types listed as "First famous wine – beautiful wine", belonging to three regions: North – Central – South, with three very special flavors and personalities. Van Village Wine, Bau Da wine, Phu Le wine. These three types of wine are like three levels of passion, drinking once is not easy to forget.

Van Village Wine, located in Van Ha commune, Viet Yen district, Bac Giang, is also known as "Van Huong fine wine", elegant, smooth and deep in taste. This wine is not drunk quickly, but taken in sips to feel the yeast absorb slowly, leaving in the tip of the tongue the sweet and fragrant aroma of sticky rice soaked in the sun and wind of the romantic midland region, absorbing the dreamy lightness of rivers winding like silk ribbons across the mountain slopes with a few leafy boats floating down carrying charming folk songs of the countryside. Van Village Wine is compared to "Van", used to entertain writers, politicians, elegant and refined people, and polite guests. One can imagine that, in the past, poets shared a glass of Van Village Wine together so that posterity would have so many beautiful poems that would be passed down forever.

Bau Da wine, Cu Lam village, An Loc commune, An Nhon district, Binh Dinh, carries many legends and legends. The wine of the Cham people serving the King, the wine of the exiles opening the world, the wine of the Tran Dynasty generals on duty, missing their homeland… The wine has a strong, seductive aroma, like a passionate invitation, opening the jar of wine is irresistible, cannot wait. Drinking in one gulp, the heat seemed to rise strongly but not harshly, so that the wine's aroma seemed to spread deep from the throat to the whole body, bursting with sweet yeast. After being drunk, you were still awake, without a deranged headache. Bau Da wine is compared to "Martial Arts", used to treat generals and people with strong and generous temperament. Returning to Binh Dinh, once while watching the red troupe women beat whips, do boxing, and drink a glass of Bau Da wine, I suddenly felt like I was living in a scene full of Vietnamese martial arts spirit.

Phu Le wine, Phu Loi hamlet, Phu Le commune, Ba Tri district, Ben Tre, a coconut wine with the flavor of the Mekong Delta, rich, generous, like the sunshine and wind of the South, like the vastness of the Southern river region. Drinking the first glass, feeling lightheaded, then just keep soft lips and drink, forgetting heaven and earth, to pour out all your heart and soul with your confidants, then next to the glass of wine "four seas are home", "four seas are brotherhood", no jealousy, no competition, no distance between high and low… host – guest are friends. Phu Le wine is considered "Romantic", used for crowded parties and entertaining friends. If anyone has the opportunity to return to the Southwest, one night sitting on a boat floating on the waves of the Tien and Hau rivers, listening to amateur folk music, drinking a glass of Phu Le wine, feels truly carefree and free.

In addition to the famous "Best Wines in the Nation" category like the above three types, there are also other famous restaurants that are no less attractive to "drunken" disciples. Anyone who has ever been to the Northwest, immersed in the vast cloudy mountains, with the melodies of flutes, flutes, leaf trumpets, gongs…, the brocade colors like embroidering flowers on the gray mist-covered mountain peaks, and the white carpet-like color of banyan flowers and spring plum blossoms, interspersed with the scent of cardamom and anise of the H'Mong, Dao, Muong people… cannot forget the wines that carry the soul of the mountains and forests. Ngo Ban Pho wine, Bac Ha, burning passionately, San Lung sticky rice wine, Dao people of Xeo village, Bat Xat – Lao Cai swirling in the clouds and rain, the warm taste of Mai Ha cassava wine in Muong, Mai Chau, Hoa Binh…

Ban Pho corn wine, located at the foot of Co Tien mountain, Bac Ha, is as clear as upstream spring water, sparkling, sweet and spicy, drinking a small sip makes your face hot, the heat then spreads all over the body, the intoxicating quality is like a mysterious attraction. No wonder, at the highland market, many H'Mong boys have forgotten the mountains and forests, hanging on horses so their wives and partners can take them home, and people down below, once they have tasted the taste of Ban Pho wine, cannot forget it. Yes, because "a cup of good wine is like a thousand cups". Put a drop of wine in your hand, the wine vapor is like invisible smoke dissolving in the mist of a strangely seductive cloud. And if you ever come to Pho village, don't forget to stop by a H'Mong house making wine, taste the newly distilled corn wine that's still hot on your lips, accompanied by the sweet and fatty taste of the string of smoked meat cooked in wine… There is no comparable flavor. San Lung wine of the Dao people in Po Sen, Bat Xat, Lao Cai mountains is called "wine of Heaven" according to an ancient legend in this mountain area. The fairy went down to Po Sen stream to get wine for Heaven's Court to entertain the fairies. San Lung – Tam Long – Three water-sucking dragons. Wine is used to worship ancestors, during holidays, festivals, weddings, and to treat good friends. The wine is made from rice grains soaked in succulent milk, a type of upland rice grown on terraced fields on the side of the mountain, brewed into rice, then combined with mountain herbs to make yeast and incense. Distilled water must be pure Po Sen spring water. When you drink wine, the fragrance spreads throughout your body and makes you feel refreshed, even if you're drunk, you won't get a headache. This wine was brought back to the countryside to drink during Tet, just wanting to be drunk for all three days of spring, to be imbued with the "fairy wine" taste of the mountainous region, to dream of a mountain girl escaping from the world of the mountains.

Mai Ha cassava wine from Muong, Mai Chau, Hoa Binh people is very special. Distilled from cooked cassava peels, brewed with forest leaves to make yeast, which is said to be the only forest in Mai Chau that has these leaves, then put into a steaming jar to produce drops of white wine as clear as drops of morning dew weighing 60%.o, it's heavy but I drink it all day without a headache. Because the wine is intoxicating, it feels warm when you drink it lovingly. Especially on moonlit nights, sitting and drinking with Muong girls, listening to Then, Sli… the wine tastes even warmer because in the glass of wine there seems to be the sparkling, affectionate eyes of a Muong beauty. Mai Ha wine is like a love thread that connects people's feelings together. In the sound of gongs, in the flickering firelight, the Muong yeast makes people feel lost in a poetic fairyland.

Lang Son land is where the legendary Ky Cung river is located, there is the love story of To Thi faithfully waiting for her husband, there is the sacred and mysterious Tam Thanh pagoda, there is the "Luon" market in the spring that fascinates young men and women from all over the country, and is also famous throughout the region for a wine named Mau Son mountain – the sacred mountain of the people of this region. Perhaps the rice used to make wine is imbued with wind – dew – mountain air, yeast brewed from forest leaves, not only carrying the mountain scent but also containing the legend of each type of leaf, so when drinking a cup of Mau Son wine, it seems like all the sadness is gone. Anyone who has troubles, tries a sip of Mau Son wine on the first day of new spring, will feel strangely peaceful.

Not only are there wines distilled from grains, there are also fermented wines, but the ingredients that make up the wine's flavor cannot lack a little rice husk – the outer shell of rice grains: Wine needed from the Northwest and Central Highlands forests. Can wine is a wine reserved for the mountains and forests. Only when drinking in a space filled with the sound of festive gongs, the voices of Khan, singing Homon, Hori, Alu by the fire of the Ede, Bana, Giarai ethnic people,… in the vast forests and mountains of the Central Highlands, or in the rhythm of spreading flowers, singing everywhere, and Han Khuong of the magical Thai people in the Northwest can you see the passionate poetry of wine, can you drink it all day and night and still want to drink it forever. forever. If we were to list all the flavors of Vietnamese wine, it would probably take many days and nights and we would have to drink countless bottles of wine, but it may not be enough. Our country Vietnam has a lot of pride, from the 4,000-year history of building and defending the country, the country with four seasons of fragrant flowers and sweet fruits, golden forests and silver seas, to the resilient and kind Vietnamese people who never give in to any threatening force… There is also a lot of pride in the products created by the hands of the Vietnamese people that have national quintessence comparable to other nationalities, including the pride of Vietnamese wine – the national wine, which is second to none. Famous wines and fine wines from famous wine countries in the world.
